Product Description

For five generations, the Henry family has been making tableware and bakeware in Marcigny, France. True to tradition all Emile Henry pieces are carefully crafted from Burgundy clay, found naturally in the region. The mineral-rich clay is combined with 100-percent natural ingredients to create a product unsurpassed for even heat distribution. Through the unique Ceradon process, each piece is fired with an extremely durable glaze that gives the finished product a naturally non-stick surface- which will not scratch from use or cleaning. A traditional dish with a simple shape, this is the basic oven dish that Emile Henry has been producing since 1850. For cooking gratins, meat or fish, it can be used for a multitude of recipes. One of the reasons that I started looking for an alternative to my old stanby 13x9 Pyrex baking dish was because it was not broiler safe. I bought the E.H. 13x10 dish a year ago for this specific purpose, and I have been very pleased with it so far.The E.H. dish is slightly wider and deeper than my Pyrex dish, which is nice because now I don't have to worry about food spilling over the sides while it is cooking in the oven (most recipes call for a 9x13 dish).The E.H. dish is also bottom rack dishwasher safe. Because the surfaces are smooth like a Pyrex, it could also be easily cleaned with a scrub brush and a dish rag. However, because the E.H. dish weighs 5 lbs.4.2 oz. (vs. the Pyrex of 3 lbs.9.9 oz.), I would definitely recommend using the dishwasher.One reviewer mentioned using aluminum foil to line the dish before cooking. I'm not sure if this was to prevent burning? Is so, why not just add a little sauce to the bottom of the dish, as you would with a Pyrex dish? Nothing mysterious here.Another nice feature about the E.H. dish is that it keeps food hotter out of the oven much longer than the Pyrex.It should also be noted that the very bottom is not smooth, like the rest of the dish, so take care not to drag it over the counters like you would with a Pyrex dish.At $60, this dish is a better bargain than the smaller E.H. designer version sold at the William-Sonoma stores. To me, this dish is prosciutto on a spam budget, and is a good buy.Do not be afraid to use this dish as the manufacturer recommends!

5Great, but I have the white!!............

I love this pan, and I got it for a really cheap price, I think I paid about 30 bucks!! I make a lasagna in the pan( line it with foil), freeze the entire thing and then pop the frozen lasagna out of the pan. That goes into the freezer. When I want to bake it, I fit it right back into the pan and voila dinner for 8!!

I was shocked to see an Emile Henry product review receive one star until I read it. Solomon is rightly unhappy about his or her experience but shouldn't take it out on Emile Henry whose products are first rate.
